White Chocolate Mousse & Berry Trifle

Ingredients

Serves 12

  • 2 x 20cm chocolate sponge cakes, cut into cubes
  • ¼ cup brandy
BERRIES
  • 500 g fresh or frozen mixed berries
  • ¼ cup caster sugar
  • 500 g fresh or frozen mixed berries
  • 1 tbsp caster sugar
MOUSSE
  • 1 pkt NESTLÉ White Melts
  • ¼ cup boiling water
  • 3 eggs, separated
  • ¾ cup whipped cream
  • 1 tbsp caster sugar

Instructions

Prep time 

  1. Place sponge cubes in a bowl, pour over brandy and allow to soak.
  2. Prepare the berries. If using frozen berries allow to thaw. Place first measure of berries into a food processor with sugar and process.
  3. Set aside ½ cup of berries from the second measure for decoration. Add remaining berries to puree.
  4. Prepare the mousse. Place melts in a medium bowl. Pour boiling water over the White Melts and microwave on medium for 1 minute. Stir until smooth.
  5. Beat egg yolks and stir into chocolate mixture, allow to cool. Stir in whipped cream.
  6. In a small clean dry bowl, beat egg whites until peaks just fold over when the beater is removed. Beat in caster sugar.
  7. Fold egg white into chocolate mixture using a large metal spoon.
  8. To assemble trifle, place ½ of the sponge cubes into a glass serving bowl, cover with ½ of the berry mixture followed by ½ of the white chocolate mousse. Repeat the layers.
  9. Cover and refrigerate for 4 hours or overnight. Garnish with berries prior to serving.
