Ingredients

  • 2 cups lightly crushed wheat bran
  • 1 cup plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • ¾ cup HIGHLANDER Lite Sweetened Condensed Milk
  • ½ cup warm water
  • 1 egg, beaten
  • 2 tbsp golden syrup
  • 3 apples, peeled and grated
  • ½ cup sultanas

Instructions

Prep time       Cook time 

  1. Preheat oven to 200°C. Lightly spray a medium 12-hole muffin pan.
  2. Place bran in a bowl. Sift in flour, baking powder, baking soda, cinnamon and mixed spice; stir to combine. Make a well in the centre of dry ingredients.
  3. Combine Condensed Milk, water, egg and golden syrup in a bowl.
  4. Pour liquid mixture into the well and add apple and sultanas. Stir until dry ingredients are just dampened.
  5. Three quaters fill each muffin pan with mixture. Bake in preheated oven for 15-20 minutes or until muffins are golden brown.
