Ingredients

Serves 16

  • 1½ cups plain flour
  • 1 cup wholemeal flour
  • 1 tsp baking soda
  • 2 eggs, lightly beaten
  • 1 can HIGHLANDER Sweetened Condensed Milk, 395g
  • 50 g unsalted butter, melted
  • 2 tbsp golden syrup
  • 1 tsp vanilla essence
  • 3 bananas, mashed

Instructions

  1. Preheat oven to 160°C. Line the base of two (21cm x 11cm) loaf pans.
  2. Combine the flours and baking soda in a large mixing bowl.
  3. Beat together the eggs, Condensed Milk, butter, golden syrup, vanilla essence and mashed banana in a separate bowl. Add to the flour mixture and mix gently until well combined.
  4. Spoon the mixture into prepared loaf pans and bake for 50-55 minutes or until golden brown and a cake tester inserted into the centre comes out clean.
  5. Allow to cool in the pan before turning out. Slice and if desired toast to serve.
