Baked Nectarines with Anzac Crumble

Ingredients

Serves 6

  • 6 nectarines, halved and stones removed
  • 1 cup (90g) UNCLE TOBYS Rolled Oats
  • ½ cup (40g) desiccated coconut
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 cup (240mL)water
  • 1 tsp vanilla essence
  • Reduced fat Yoghurt, to serve

Instructions

Prep time       Cook time 

  1. Preheat oven to 180°C/160°C fan forced. Grease a small oven proof dish.
  2. Place nectarine halves, skin side down, in prepared dish. Combine rolled oats, coconut, honey and cinnamon in a small bowl. Divide between nectarine halves. Combine water and vanilla essence; pour into base of dish.
  3. Bake for 20 minutes or until nectarines are soft. Serve with yoghurt.
