Baked Cherry Cheesecake
“A delicious creamy cheesecake with cherries and a quick cherry sauce.”
Ingredients
Serves 10
- 350 g wine biscuits, crushed
- 180 g unsalted butter, melted
- 1 tsp mixed spice
- FILLING
- 1 can cherries in light syrup, stones removed, 425g
- 500 g cream cheese, softened
- ¾ cup sugar
- 1 can NESTLÉ Reduced Cream, 250g
- 4 eggs
- 2 tbsp plain flour
- 2 tbsp fresh lemon juice
- 2 tsp cornflour
Instructions

- Preheat oven to 170°C.
- Combine biscuits, butter and spice, mix well, press into base and sides of 23cm springform pan, refrigerate until firm.
- FILLING:
- Drain cherries, reserve syrup. Beat cream cheese and sugar until smooth and creamy, add Reduced Cream and eggs, beat until smooth. Fold in flour, lemon juice and cherries, pour into crumb crust.
- Bake for 80 minutes until just firm.
- Combine cornflour with reserved cherry syrup in pan, stir over low heat until thickened, cool, serve with cheesecake. Decorate with icing sugar or grated chocolate if desired.
