  1. Preheat oven to 160°C/140°C fan-forced.
  2. Combine biscuits and butter; press mixture into base and sides of a 23cm springform pan. Refrigerate while making filling.
  3. Using an electric mixer, beat cream cheese and Condensed Milk until thick and creamy. Add eggs, cream and vanilla, beat until light and fluffy.
  4. Pour mixture into prepared pan. Bake 1¼ hours or until just set; refrigerate until required. Serve with whipped cream, if desired.
