Ingredients

Serves 4

  • 4 apples, peeled, cored and sliced
  • 300 g rhubarb, chopped
  • 3 tbsp sugar
  • 2 tbsp water
  • ½ cup UNCLE TOBYS Rolled Oats
  • ½ cup wholemeal flour
  • ½ cup desiccated coconut
  • ¼ cup sliced almonds
  • 2 tbsp brown sugar
  • 50 g margarine
  • light ice cream to serve

Instructions

Prep time       Cook time 

  1. Preheat oven to 180°C.
  2. Place apples, rhubarb, sugar and water in a saucepan. Cover and cook over moderate heat for 10 minutes, stirring occasionally.
  3. Place stewed fruit in an ovenproof dish or 4 individual ramekins.
  4. Mix UNCLE TOBYS Rolled Oats, flour, coconut, almonds and brown sugar in a bowl. Rub in margarine to form a crumble. Sprinkle mixture over fruit.
  5. Bake in preheated oven for 15 minutes or until crumble is golden. Serve with ice cream.
